The Retail Food and Beverage (FAB) offering at Luna Park includes grab and go items, popular fun park favourites and bistro menu options.
This is a newly created, full-time position for a Retail Sous Chef to take charge of one outlets FAB offering. This themed bistro style outlet is currently undergoing a substantial refurbishment and upgrade, and is scheduled to open in the coming weeks.  
High volume retail food experience and a natural sense of creativity will be important to deliver on our promise of ‘exceptional guest experience’. The Retail Sous Chef will be required to design and prepare menu items that in itself becomes an experience, by injecting a sense of playfulness and theatre into the preparation and presentation.  



Reporting to the Retail Food and Beverage Operations Manager, the Retail Sous Chef will be instrumental in planning and preparing for the daily outlets operation. Key responsibilities include innovative menu design, menu costing and implementation, as well as controlling labour and food costs. 
Through sound professional leadership, you will ensure the outlet delivers consistently high-quality food production and presentation at all times, facilitating smooth and well managed service periods.  
Provide clear direction and coaching to the FAB outlet team, including supervising, training, developing, motivating and mentoring junior chefs, kitchenhands and the service team.  



To be successful in this role your proven skills will include clear communication and a true passion and commitment for high quality food preparation, presentation and hygiene/HACCP standards.  Collaboration, flexibility and a willingness to assist other teams within the FAB and Functions Catering Team will go hand in hand with your passion for your trade. 
You will thrive being ‘hands on’ and working in a dynamic, fast paced kitchen with the ability to perform multiple tasks under pressure. You take pride in developing your team members and have the ability to assume responsibility and work autonomously.  

You will also require: 

  • Demonstrated experience at Sous level in a high-volume retail catering environment
  • Commercial Cookery qualification (minimum Cert III)
  • Strong planning, organisation and execution skills
  • Extensive food knowledge and creative culinary skill
  • Be able to demonstrate an up to date and in depth understanding of the industry
  • Strong team player
  • Sound decision making skills
  • Able to handle high volume catering in a calm and professional manner
  • Practise quality and cost control measures
  • HACCP, Food Safety and WH&S awareness
  • Flexibility to work shifts that include evenings, weekends and holidays
